This is such an easy recipe and one of my kid’s favorites. It’s a great week night meal and is easy to fix in under 30 minutes. Balance out the meal with some green beans, or a salad and you have the perfect meal.Enjoy!
One pack of assorted pork chops, thin cut works the best
One medium onion, chopped
White or brown rice, I used Minute Rice and combined the two
Using a deep skillet, brown the chopped onion in the olive oil. Add the pork chops once the onions are soft and translucent. Brown on both sides, moving the onion around to allow even browning. Remove the chops and keep warm on a separate plate.
Follow the instructions on the box of rice for the number of servings you wish to make, substituting the chicken broth for the water. Add the chicken broth first, stirring to scrap off the browned onions. Add the seasoning to the broth and onion mixture, and then the rice.
I made enough for six servings to go with about 8 chops.
Add the pork chops back in (on top of the rice) , cover and cook until the rice is done.
