It’s that time of year again when the summer days are hot and no one wants to be cooking over a hot stove! Today I wanted to share some of my favorite summer recipes. For years I have had a vegetable garden, and some years the abundance of tomatoes, cucumbers, and squash was overwhelming. You can only give so much away to your neighbors before they start heading in another direction when they see ya coming, know what I mean?! So below are some easy summer salads to help use up all those veggies before they spoil. Enjoy!
Tomato Basil Salad
6 ripe plum tomatoes, cored and diced
1/2 red or white onion, diced
shredded fresh basil leaves to taste
minced garlic, 1 clove ( I use jarred)
1/2 tablespoon of balsamic vinegar
1 tablespoon of red wine vinegar
1/2 tablespoon of olive oil
sea salt to taste
freshly ground pepper
Mix all ingredients , chill and serve.
Old Fashioned Tomato Cucumber Salad
1 large cucumber
2 to 3 medium tomatoes, Roma, Beefsteak or whatever you have available
1/2 to 1 medium onion, preferable Vadalia or sweet
2 Tablespoons water
2 Tablespoons white vinegar
1 Tablespoon sugar
Mix all ingredients , chill and serve with a slotted spoon.
Corn and Tomato Combo
2 Tablespoons butter
3 cups of diced tomatoes
3 cups of fresh or frozen corn, I prefer white or a mix of white and yellow
1/2 cup of chopped green pepper
salt to taste
Ok, So technically this isn’t not a salad :)….In a large skillet melt the butter, add all the veggies and salt. Bring to a boil, reduce heat. Cover and cook for 10 minutes.
Uncover and cook an additional 20 minutes, or until all the liquid has evaporated.
